Mousse is a light prepared cream that incorporates air bubbles to give it a light and airy texture. It can be thick, creamy, light, and fluffy depending on your technique. A mousse may be sweet or savory. Sweet dish with the consistency of light foam, composed of a pureed chief ingredient mixed with egg whites, and whipped cream. Mousses are almost always frozen dishes, and sweet mousses are sometimes served frozen only.

Chocolate mousse cake is made of the dense chocolate brownie base, cool creamy mousse filling, and topped with rich chocolate ganache. When applied to a dessert, mousse implies egg whites. And when whipped cream is used in its place, creating a much richer dessert, technically it becomes a cream. In whipping egg whites or cream you are creating little air balloons.
